Zucchini

    Hello! My kid don't like zucchini. Can you offer a really tasty dish with it? I will be grateful for any recipes!

    zucchini slices dredged in batter and fried.  Zucchini fritters.  Zucchini chocolate quick bread.  Stuffed zucchini with breadcrumbs and parmesan baked in the oven.  Grate it and mix it into to meatballs, or soups or stews.

    IMO it's not so much about the recipe but more about the technique. First, the large the zuchini, the more chances of it being bitter. Choose smaller zuchinis, cut them in half lengthwise, and remove all the seeds with a teaspoon. Then dice into small 1/3" cubes. Saute in a hot pan only for a few minutes with olive oil, a couple of smashed garlic cloves and a sprig of thyme. Add salt and pepper at the end.

    You can then fold the zucchinis into a risotto, a pasta dish, or use the same technique to saute eggplants, bell peppers, and fold all of those in a tomato concasse to make ratatouille, etc. 

    Another favorite of mine when I was a kid: slice zuchinis (seeds and all), saute over very high heat to get some color, finish with cream and serve with a ground beef patty.

    As a kid I loved when my mum would flour, egg wash, saltine crackers, batter and fry them up. I agree with Koukouvagia, make zucchini bread definitely.

    There are many recipe on the net. Make sure you pick one that uses applesauce as it keeps it very moist. (also nutritious)

    If your child like nuts or raisins, dried abricots,  you can put those in too.

    A good shake of cinnamon never hurt anyone.

    Why you want your kid to eat zucchini if your kid doesn't like it?/img/vbsmilies/smilies/redface.gif  My mum loved me to feed me with all sorts of vegetables... I remember zucchini bars. I have not ever cook them by myself but I found the recipe

    Disguising it in an unhealthy way takes away the benefits of eating zucchini.

    That being said.. Cooking slices that have been seeded in lemon juice, sugar and cinnamon tastes very similar to cooked cinnamon apples. This can be used alone, at the bottom of a crisp or in a pie shell if thickened with cornstarch.

    Another unhealthy yet tasty way to eat zucchini is to cook it down until very soft, mix with Velveeta or a cheese sauce and diced jalapenos and bake topped with buttered breadcrumbs. It's cooked so much that it is just a cheesy mushy mixture under breadcrumbs so not a zucc in sight.

    yup, I'm in Miss KK's camp as well!

    ANYTHING breaded and then deep fried, tempura style, panko, cracker crumb, bread coating, battered...

    BUT WAIT!   let's make that even better with a dipper!  ranch, sourcream, 1000 island, honeymustard, my personal fav-green goddess, sweet chile sauce, marinara ... how about in a sweeter application ... deep fried fritter with a dipper of pure maple syrup or honey and cinnamon ... you could put out a smorgesboard and let the kidos make their own choices ...

    That said, Velveeta is not food.

    I agree absolutely that Helga should not use all these unhealthy ways to cook zucchini if she wants to save the benefits of it when eating./img/vbsmilies/smilies/smile.gif
