zabaglione deflated overnight in refrigerator

    help - made traditional zabaglione and this time it deflated overnight in refrigerator- i used 8 egg yolks, 1 cup sugar, 1 cup marsala dolce - it was foamy over double boiler at 140 degrees. Let it cool and then covered pan and put in fridge - next morning looked like gross soup with no foam. what the heck happened!!/img/vbsmilies/smilies/confused.gif

    What will happen ever single time. That is science at work. There is nothing to hold the whipped air structure up overnight. Zabaglione is made to serve immediately.

    If you want to hold it for a longer time fold in whipped cream or meringue.
