Your view on this plating technique

    In general, what do you think about putting a vessel on a plate when there's stuff already on the plate?  For example, french fries on a plate with a ramekin of aioli on the same plate.

    My thinking and the way I was taught is we should never have food touching the outside of a serving dish.  In this case the fries would be touching the outside of the ramekin.  Am I being too traditional?

    Depends on the restaurants style of service.  I personally would always like all my side dishes to be on their own serving plate, but thats when I'm in the kitchen.  When I'm dining, I couldn't really care.

    When dining I do enjoy little sauce vessels on my plate of food. I don't mind my food touching the outside sides of such vessel as long as I trust the dishwasher.

    Right so if it's clean I don't think it matters, unless it's officially not a food contact surface.

    I don't mind at all but visually it does make things crowded.

    my own concerns about this idea is, for me, I have a very bad habit of dumping the ramekin either on the floor as I bring it to the table or actually on the table ... /img/vbsmilies/smilies/blushing.gif   klutzy...  in our home, I pass DH his plate of say, fish and chips and then I place multiple dishes of dipping sauce down in the middle of the table to share

    Yep K-Girl im with you on that one. 

    Me carrying various plates with 1 ramekin each , will cause a disaster. XD

    this was lunch out at a great little place in town a bit ago with my Mother,

    I have no clue how that gal got TWO platters like this to the table

    at the same time without dumping down the front of me...

    talent, shear talent... maybe that's why I cook and not serve...  BAHAHA!
