My preference, Kuan, runs to the heritage breeds like the storied Berkshire. The meat is generously marbled--a wonderful antidote to the pork raised in the U.S. for the Pork Board's "other white meat" campaign. (The Pork Board, incidentally, recently dropped this slogan from their advertising.) Fat equals flavor, of course. For a really over-the-top experience, seek out mangalitsa pork.
