Xanthum Gum

Hello Chefs,

Wondering what other uses does Xanthum gum have in the kitchen. In terms of sauces, purees ect.

Just picked some up to blend into brewed coffee. Wondering if this is a widely universal ingredient?

It is a stabilizer which keeps certain foods from breaking down and to withstand different temperatures and pH levels . It can be used for sauces and dressings to prolong their ability to remain stable (shelf life).

I use it in making hot sauces. A little goes a long way. I've also occasionally used it when making salsas. It will give a lot of body to a salsa verde for example.
