wusthof or henckels

    I'm looking in to the 10pc wusthof grand prix2 and the 11pc ja henckels twin signature series.. Need some opinions please..any insight will be appreciated.. Thank u

    I've used both with similar good solid performance. I just happen to prefer the handles on the wusthof, it's a bit more comfortable in my old arthritic hand.

    Are they sharp? Do they hold a edge well? I'm leaning towards wusthof. I live I a small town in west TN, no cutlery shops, cant physically hold them. So I'm gathering as much info as I can before I buy

    With the thought in mind that I do not think that Wusthof or Henkles are the finest knives that Chef Lagom has handled, and regardless of that I look forward to visiting his restaurant some time in my European travels, to answer your last questions the performance for German stainless in general is unexceptional.  And when you add full bolsters this makes proper sharpening simply unmanageable for any who do not have a bench grinder or similar device to cull that huge blob of metal out of the way.  And of course all dull and otherwise poorly ground knives are born equal.

    Do a "Knife set" search in this forum and you will get lots of valuable information.

    Yes they how an edge. I put them to the stones once a week a can shave a hair with them. As an average in my main kitchen we prepare food for 1100 every day so they get a lot of use

    Im not sure what you mean by unacceptable ? I can shave a hair with my wusthof knives.

    Oh heavens Chef Lagom please do not be offended by anything I've said here - I really do hope to be in your neck of the woods this spring and if so would absolutely hate to be tossed out of your establishment!  All right, I really don't think you'd ever go that far.

    Yes you can get them sharp enough to shave hair, as can be done with many knives, even the cheapest, but they do not necessarily stay that way for very long.  And as I pointed out full bolsters are also a problem.  And there are some other issues to consider, like knife sets themselves.  I only wish for petespoiled to be more generally informed.  You know what geeks we are in the knife forum here.  I have a Wusthof Ikon that has seen a lot of daily use, I have cut onion slices <1mm with it, but I will not morn its retirement when a Takamura Migaki arrives in the mail any day now.

    Rick , we are eating dinner at my house when you're on Swedens best coast, I dont give a a shit what brand of knife you use.

    Come be my guest. Göteborg is a great place to get introduced to Sweden.

    Thank u rick, I appreciate your honesty and opinions. I know those are the lower price range of the two brands. Just trying to find the best of the two.
