Would like to get a slicing knife

    Take a look about at the red handled knife about 1/4th the way down this page.  A real slicer for jerkey, THIN.  Recommendations, please.  Also it'll be used for slicing unsalted, raw fatback off bellies to line terrines for pate.  And I really prefer old Sabatiers if they can be found.  Will checkout ebay and Sabatier Nogent.

    Google up roast beef slicer in shopping and you will see many of that shape from Victorinox, Dexter, and all the major players.

    They are typically very long and very thin. Chicago Cutlery made one that had a much thicker spine than a Dexter for example.

    In searching, I'd also recommend checking out salmon slicing knives.
