Would cheese go well with roasted peppers and eggplant?

    Would cheese go well with roasted peppers and eggplant?

    If not any other ideas what to do with cheese, red peppers and eggplant?

    A little uncreative on my part, but the first thing that comes to mind is moussaka.

    I see in your profile that you work well with sausage meats. I bet you could make a killer and original moussaka with your talents.

    Peppers and eggplant could go a lot of ways.

    A sharp cheese and a mild melty cheese would be a good start towards an appetizer sort of thing.

    There's pepperonata, with eggplant instead of tomato and maybe olives. Or go more towards a tapenade with olives. 

    Some dry sausage and good bread and olive oil. 

    I can see a pasta sauce out of that or even filling some pasta if firmed up with some bread crumbs and pecorino.

    A layer of a vegetarian lasagna.

    @phatch is that Doogie Howser, I see?

    There are many ways to go, given the ingredients.  Check out the "Eggplant Challenge."

    Try a Philly Cheesesteak stuffed pepper, eggplant pizza (w/o the bread)...

    ETA:  I see the sausage was deleted, or my eyes deceiving me. :)

    That's Matthew Broderick in Ferris Bueller's Day Off. They steal a name off the reservation list and pretend to be that person. That person being Abe Froman, the fictional sausage king of Chicago.

    A nice yellow american cheese would be perfect. Also wash it down with a bottle of yellow tail sweet red.
    Sorry couldnt resist. Dont do that. At all. Ever.
    Depends on the cheese. I would go with a nice goat cheese. Roast the eggplant and peppers and than stack them together alternating layers of eggplant whipped goat cheese and pepper. Top w a balsamic redux.

    Pressed Italian Sandwiiches with roasted tomatoes, peppers, onions, eggplant and mozzarella cheese on Ciabatta bread.

    Toss them into pasta with same.  Adding Feta cheese is another idea.

    Roasted pepper and eggplant pizza with goat or mozzarella cheese.

    Capanota comes to mind, but no cheese.

    Serve as a chilled salad with ricotta salata.
