I am working as a short order cook right now, but as soon as my certification comes through, I will be a Journeyman. When I was at school this January we were talking about different kitchen positions and somebody said 'anyone can run a line, but not anyone can run the kitchen'. I understood that to mean that anyone can be a good line cook, but it takes more than being a good line cook to run the entire kitchen. What do you think ?.
