Those that will smile ironically after reading this article probably ignore that in some countries like Germany for example, bakeries spend a huge amount on cake and biscuit research.

In fact the physics of cakes and baking generally is astonishingly well developed. The reason is, of course, that the market is huge and any improvements in efficiency or quality pay back very well. I suspect the only better finaced areas of research are defence and pharms.:p
