Wholemeal bread question...

Hi chefs, can I exchange some wholemeal flour with it bread flour into my sponge sweet dough recipe to create wholemeal bun? (using sponge method)

it is possible.

Some things to consider would be how much wholemeal flour to add. The extra bran and germ over time will soak up the moisture in your dough, so make it a bit wetter.

The bran and germ in the flour also act like tiny razors to the gluten network in the bread. Takes much longer to mix and develop gluten.
