Whipped Cream dispenser guidance

Have bought one of these fantastic tools Whipped cream gun (500ml). Have been using Double cream from the milk delivery company in the UK.
Have done a coffee-infused sweet cream that was very popular! And a rosemary and lemon version that was not ..

Would like to have some ideas or guides

If memory serves, those devices simply force air in to a substance and many cooks have used them to do various foams and gels. Which means you don't have to stick with heavy cream. If you have access to things like guar gum and other stabilizers you can use almost any puree or liquid with the stabilizer for some fun effects. I can't provide any details but I'm sure there are some books on the topic and a few web pages too.
