Which part of the scallion (green onion) do you use?

In some recipes it’s worth separating white from green since they cook at slightly different rates. You’ll see that in Chinese recipes.

But never throw away good food!

Yes. All of it. Raw, all of it except the root. As aromatic in a liquid, all of it, even the root.
