Where to go for my Externship

    I am a Culinary Arts student at Le Cordon Bleu in Cambride MA and my program ends in December 2012 and my externship will start shortly after that, my problem is I have to line up my externship starting now, but I have no idea where to go, I would like to go to New York or places like Orlando, Miami or Tampa Bay in Florida. I actually would like to go to places I have never been like North carolina or so but I understand these are seasonal and work best for summer externships. My interest is mostly in catering but I have heard people saying a Hotel is better so I can get experience in many different scenarios which I would love to do. Any tips? Ideas? Names? Offers? Please!
