Whats Your Holiday Menu ?

Hey folks , here are the holidays again and its a busy time of year for all of us who enjoy preparing good food. What do you have in mind as far as your menus are concerned for
Thanksgiving , Christmas and New Years ? We can really get some good ideas here as there is a lot of talent on this web site .
I work at a small hospital and I will be doing about 300 meals
( Patients and Staff ) for each of these holidays.
My administrator wants me to stay close to tradition so for Thanksgiving I am doing Roast Turkey , Cornbread Dressing ,
Dirty ******* Mashed Potatos , Giblet Gravy , Green Bean Amandine , Assorted Dinner Rolls , Cranberry Sauce , Finished
with Pumpkin Pie Topped with Whipped Cream.
Christmas will be Roast Prime Rib Au Jus , Vegetarian Lasagna ,
Twice Baked Potatoes , Stir Fried Vegetable Medly , Relish Trays ,
Assorted Dinner Rolls , Relish Trays , and a Medly of Cheesecakes.
I have not thought about New Years yet so maybe I can get pick up somthing from one of you . Thanks for all your tips and Happy Holidays .

My "menu" will only be for two people, but here is what I have so far:

THANKSGIVING
Fruit and cheese plate -pears, apples, MANCHEGO, Havarti, and Brie
Wild Mushroom Lasagna
Stuffed Acorn Squash
????

NEW YEARS
Cheese fondue, chocolates, and champagne (it's a tradition)

My holiday will be consumed by work but here is our fall harvest menu:

Leek Tart

Salad of mixed greens w/ pears and gorganzola w/ a pomegranite vinegrette

Turban squash soup (less sweet than acorn which suits me)

Tourndoes of beef on wild rice croquettes w/ a forest mushroom ragout

and a Great (if I do say so myself) chocolate terrine w/ ollieberry sauce
