Just wanted to introduce myself. Line cook from Texas, experience on the fly. Hobbies are guns, cigars, and all sorts of other "good ole boy" stuff. Had a few buddies go through CIA San Antone and LCB Austin but I haven't done much education wise except for a couple tastings and masterclasses.

Worked at a corporate training restaurant training managers on the line for a big box sports bar and have done some mom and pop jobs too. I try to challenge myself with a new dish every morning; I cross all borders.

Been considering opening up a restaurant. Got a few plans just need to connect the dots and figure out what my costs are going to be.
