What's the best way to generate humidity when baking bread? (besides spraying the oven with water)

    What's the best way to generate humidity when baking bread?  Other than spraying the oven with water, which I'm not sure how good that is for an electric oven.

    put a pan of water in rear of oven.  When you spray it over time you will warp the oven.

    Cast iron pan filled with lava rocks placed in the bottom of the oven.  Pour water over the rocks once the loaf has been placed into the oven.

    Having experimented alot with my own oven, I think the best way for me is a cast iron or ceramic pan heated in the oven and boiled kettle water poured in a couple of minutes before you put your bread in. Do remember though that because the oven is hot you will not see the steam - the humidity will be there, but it won't be visible.

    Cook the bread in a covered cast-iron pot.

    Traps it's own steam and the radiant energy inside the pot will give you a huge oven spring.

    Shatteringly crackly crusts!
