I'm new to the site and really enjoy all I've learned in the last hour. My question is about beef marrow. I found some beef leg bones with marrow for sale and bought the pack (2) not knowing what to do with them. I read a recipe that called for soaking them in ice water for 1/2 hour, then either poaching them or roasting them. I poached them for about 45 mins, then pushed out the marrow. Now I'm looking for the best way to use it. It looks like curds. Not sure if this is how if should look.. Any advice? Thanks..
