    Wow! I wanted to poke my eyes out......now I HAVE to watch her meatball video.
    Just think, these are the people that come into our restaurants and think they know what's good and bad.

    I stopped at the garlic powder.  I might not get to sleep tonight not knowing there's onion powder or dried herbs in there......

    And she also fits the criteria of being remembered forever; either do things extremely well or extremely bad.

    Carl Sagan once said that if you wanted to make an apple pie from scratch you first must create the universe.

    So......who among you thinks that cooking a tomato sauce from Italy MUST BE completely made from fresh tomatoes and fresh garlic and fresh everything otherwise it is not right?

    You guys think that everything made from cans is bad?

    Do I detect a bit of pretension here?

    Cooking IS all about what you like and NOT what others say it SHOULD or SHOULDN'T be.

    Seems like recently these forums have turned into a pick on this person or pick on that technique and trash them into the ground.

    Who do you think you are?

    Sorry, but I'll step down now......

    There has been a lot of talk about having very good kitchen knives in this forum.

    This video proves, once and for all, that you can be a very good chef, producing wonderful food with only one dull paring knife.

    some People should not cook for other People.  i have more respect for People in prison and would not let her cook for cons.

    What's worse than an out of focus video? An out of focus video in HD.

    Almost all the time my tomato sauce comes from canned whole tomatoes, and the garlic powder application is a matter of preference.  It is not what we might call "wrong."   It's just not what I would do.

    The really wrong part is the pan on the cutting board, the wobbly cutting board, and getting her finger in the way while trying to chop the onion.

    Nothing against cans, but I have something against powdered(dehydrated) garlic. 

    Powdered garlic has it's uses, and they are:

    -For meat farces (snausages, pates, and the like) 

    -Cold applications like salad dressings

    -With yeast risen products like foccacia or herb bread.

    But or a sauce that has been simmered for a length of time, has a high water content anyway, and has a shelf life of a few days, sorry, no powdered garlic.  If you are going to use fresh onions, might as well use fresh garlic.

    Tomato paste from a can is not bad, but when you sweat aromatics and then add  canned tomato paste, and sweat that for a while before you add tomatoes (fresh or canned) the taste is very, very, very good.

    That was so backwards but so hilarious, I love how sad her basil looks, not to mention her explaining why you need all the oil, then instructing you to remove it. The comments on the video are also a hoot.
