What is Spaghetti squash and how do I cook it?

    It'll be marked spaghetti squash at the store. Cut it in half longways, take the seeds out, season it & roast it cut side down on a cookie sheet until it's cooked- maybe an hour? I honestly don't remember. Once it's cooked, you scrape out the cooked flesh with a fork and forms long strands- hence 'spaghetti' squash. Mix the shredded pulp with butter anx parm, it'll be pretty tasty. Or do whatever. It's good stuff.

    There are several cooking methods. It's been a while, but as I recall, I stabbed it and nuked. Cut in half, remove seeds, and scrape insides with a fork for the spaghetti-like strands.

    Unless I undercooked it, it does not taste like spaghetti. It had a crunch to the taste, and tasted like a veggie. For me it's a little difficult to slice in half raw. The price is also high - right now about $6 each.

    Since I am low carbing, I have an idea for meatballs and ss prepped in a slow cooker - making my adjustments -- turkey/spinach/ricotta meatballs and homemade tomato sauce w San marzanos, etc.for a lazy day.

    You could combine the ss with chili and add a bunch of cheese and sour cream,or mix in some whole wheat spaghetti.
    See how you like it and experiment.

    I always roast them whole, then split and clean out the seeds. A little butter, s&p and a pinch of something sweet.

    They actually do work reasonably well in the microwave.  An ex-GF of mine made 'em that way. I always split them lengthwise, season with S&P and put a little butter in them, then wrap with foil and roast them for about an hour. Scrape out the meat and you're good.  I love spaghetti squash!

    I boil them for about 25 or 30 minutes until easily pierced with a sharp knife, cut in half and allow to cool enough to remove the seeds and flesh. The cooked flesh is very much different from other squash.

    It's actually fun to serve spaghetti squash to kids, as a kind of faux spaghetti n meatballs or 

    mock alfredo . Ya dont let em see it in its "native state" of course.

    Ask your produce guy in your market. When I can't find what I'm looking for, sometimes I ask for the manager. They are more than happy to accommodate and stock items that folks want - or provide an answer as to why or why not the item is unavailable. Check out farmers' markets in your area, as well.
