What is Pacific Northwest Cuisine?

    Im a chef im looking to relocate my family. Im looming at the Portland and Seattle areas. Anyone know much about the style of food in that area?

    Lots of fresh salmon. The large northwest cities have a big asian population so that is a big influence, some scandinavian. Both cities have great farmers markets and are very multicultural . Both big on fresh, local foods. Washington state is the nations biggest producer of apples but oddly to me they don't have a big influence on Seattle's restaurants in a  cultural sense. Both cities have many fine, upscale restaurants as well as places of every other description. Lots of microbreweries and artisanal bread bakeries. And of course, lots and lots of great coffee.

    The restaurant scene in Portland and Seattle will be Much Different that what you have to experience in Chico. Big hipster vibe in both cities.

    Yes huge difference and all I keep hearing about is the food is different I dont really know what to expect

    Lots of seafood, crab, salmon, halibut, clams, oysters, etc, think fresh, local, sustainable, small batch producers.

    Look at Google Portland & Seattle for some ideas.

    I am on the central Oregon coast, my menus are alot of Salmon, Halibut, Sturgeon, Clams, Shrimp, Lamb, hazelnuts, Marion berries and Venison. Then it depends on what cooking style you like, but a couple of hours north of here into Portland the cuisine changes drastically. Oh did i forget to mention Crab! Lots of Crab!
