What is a SIMPLE recipe for homemade cake? and a whipped icing?

    I would like to have a recipe for both, in chocolate and vanillla if possible.

    I don't have a lot of money but want to make a cake from scratch. Just easy chocolate and vanilla but very tasty. I just don't want to spend a fortune to make a cake. I most likely won't have any of the ingredients. Thanks.

    It depends what you consider easy.  When you bake all day, whipping a cake together can sometimes feel like one of those moments where you think "I have ten minutes before the meeting starts, yeah I'll make a cake."  But when we all think back to when we first started baking, cakes never seemed that easy.  

    I am going to suggest Donna Hay as some of the easiest from-scratch cake recipes.  I have some that only take a few more steps and are better, but she has some that are just so simple it can be a good place to start.  Most libraries will carry some of her books, but here is a super-easy white chocolate cake -

    6 oz butter

    1 cup milk

    1 1/2 cups sugar

    5 oz white chocolate, chopped

    2 cups flour

    1 1/2 tsp baking powder

    1 tsp vanilla

    2 eggs

    Preheat oven to 325.  Place the butter, milk, sugar and chocolate in a saucepan over low heat and stir until melted and smooth.  

    Place the flour, baking powder, vanilla and eggs in a bowl.  Add the chocolate mixture and whisk until smooth.  Pour the mixture into a 9-inch pan that is sprayed with baking spray. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.  Cool.

    For vanilla can I just leave out the white chocolate or for chocolate can I use milk chocolate or dark chocolate instead? Also, do you know of a simple  very soft sweet whipped icing (vanilla and chocolate)? What would be a little bit more I could do with the recipe? Not a lot more though. Thanks so much.

    Can't get simpler then a genoise. Easy recipe to remember too. Eggs 150 Sugar 100 Flour 100

    Eggs 9 oz (about 5ea)

    Sugar 6 oz

    Cake Flour 6 oz (AP Flour is fine too)

    Whip eggs and sugar over a low burner until frothy and warm. Beat the eggs and sugar until light and thick. Fold in the sifted flour by thirds.. Spread in a prepared half sheet pan. Bake at 375 deg F until done.

    You can add what ever extracts or flavorings you like to the batter. You can also fold in 2oz melted butter with the flour for a richer cake. For chocolate cake, replace one oz of flour with one once of cocoa powder.
