What happens when you propose a menu and the "signiture" item is not available?

    Happens if you use local seasonal products.  All of a sudden there are no morels for the pasta...

    has this happened to you? if so what did you do to appease your clients?

    Could you go with dried? Dried mushrooms can be pretty good reconstituted but you don't want to leave them whole probably as they can be tough that way.
