What do you think of people that buys knives but never uses them?

So I have a friend who collects knives and doesn't use them. He has bought two globals and a block of Zwilling four star and knives in Malaysia are expensive. We are both culinary school graduates. The thing is he just collects them and never uses them. Personally I think the knives are wasted that way. So what do you guys think? Btw I'm new here [emoji]128512[/emoji]

I have never heard of anyone collecting globals or zwillings, weirdo indeed!

That may be the real question.

I've got a bunch of knives which I intend to sooner or later sharpen/restore and then use them, but which I haven't yet gotten around to working on.

I buy knives when they show up on eBay - NOT when I think they will be useful to me.

Also, consider Damascus-style blades.  Pretty as almost nothing else - but use them only at the high risk of damaging the cladding and reducing their future resale value.  Restoring the blade surfaces is also a Royal PITA, and involves etching with acid (Yikes!).

If your friend .is just waiting to use them after culinary school, then I would wonder about his choices.

As for his choices, I can't say I would be all that impressed by either Globals or a block of Zwilling Henckels.

The handles on Globals are such a personal love-or-loathe item (think comfort vs pain, when using a Global knife for hours on end) that I think he needs to actually use it for several hours of real work.to come to a meaningful decision as to whether to actually use and keep them.

As for the block of Zwilling Henckels Four Stars - my guess is that it was an impulse buy.  I'd question how many of the knives will actually be used.  I also would want to look at the length of the main chef's knife (is it just 20 cm - or is it a more practical - for a chef - 250 mm?).

Just my take.

What I think is people have more money then brains sometimes. Sometimes they have no money, and no brains but yet they find a way to buy some globals.

Two globals and a block of henkels is a far cry from a collection btw. Some people are knife freaks. Its probably the first two brands of knives he saw. Wait till he sees the Porsche. What a waste haha.

I have at least 20 ( if you count paring and carving eaaaybmote) knives and I do not collect them. Just happen to cut stuff for a living. Many if them do collect dust.

knives are quite beautiful, i can understand the desire to collect them especially damascus knives or hand hammered knives. Zwilling and Global do seem like odd choices though.

As for him being a cook and not using them, i guess it depends on what knives he does use at work and what kind of work he does. If i lost my current job and started working as a cook in an Applebees you can be damn sure i'm not taking my Mac to work. I'm going to either use the house knives or my Wusthof. On the flip side if he is the head chef at a non chain restaurant and is using inferior tools at work, then i would say it speaks poorly of him. So basically, if he takes pride in his work, he should be using the best tools available to him, to make the best product possible. If its just another job then i understand not going the extra mile. Or maybe if he isn't confident in his knife maintenance skills yet, it makes sense to use cheaper knives until he is more comfortable taking care of the more expensive knives.

He does have a beater, a 12 inch Japanese knife but from a unknown brand and he gives it to me to sharpen them which I HATE IT because the steel is so damn hard to sharpen. Well the thing is in my country Malaysia there aren't Williams Sonoma or surla table here so globals and Zwilling are considered premium knives. I have seen shun before but there were only two of them. He actually cooks for a living but does not bring his knives to work because of coworkers that abuse knives. Nah I'm not jealous of the knives, my trusty victorinox are sharper than those knives. I have handled the globals and the handles are too small for me and the four star is a pain to get it real sharp.

Well we don't have shops that sell 100 different brands of knives here... But I did find dealers who sell the tojiro and mac and I plan to get either one of them to replace my victorinox later on.

In Malaysia we don't have shops selling plenty of different knife brands. I did find dealers who sell Tojiro and Mac. I did advice him to learn to sharpen his knives himself but he said that I'm here to sharpen them so he doesn't need to learn which got me a little annoyed.

I agree on the globals. Personally I hate the handles, too small for me as for the Zwilling four star he bought them decade there was a discount he bought the set of 5 at about 160usd. We don't have knife shops here so it's difficult to find knives. I have seen the shun before but only two of them are being sold. His main knife is a 12 inch jck from an unknown brand. He doesn't intend to use them. He only uses them maybe once or twice every months.

zwilling four star I can see those do have a huge reputation among old school pros. they are, as someone on kkf said probably the best german mass produced knife period. I just retired my four star 9" chefs for a tojiro dp 240mm western deba

Well thank you [emoji]128513[/emoji] but I got to admit the four stars were comfortable but just a pain to sharpen and the full bolster which I dislike

People who buy knifes ,but never use them are called COLLECTORS. Some collect stamps ,others collect cars while others collet knifes .

I too do dream of my huge collection of money but just can't afford it./img/vbsmilies/smilies/biggrin.gif

If you collect something limited edition or handmade by a master craftsman then yes I MAYBE will able to understand collecting. I disagree with him only because he's a friend and I do not want him to waste unnecessary money on knives that he HAS. Eg, he called me to get my opinion for a global 20 year anniversary petty that costs the same as a chef knife but comes with a box and I persuaded him not too why? Because he's wasting money. Don't get me wrong, I mean I want either the Tojiro dp or Mac mighty but those are knives that I do intend to use and not kept collecting dust in the drawer.

It is his money he is waisting. If it makes him happy; leave it alone .

We just can hope that he realizes it before he is broke.

And collecting things you can't afford can also be some kind of  strange uncontrollable addiction.
