What device to hold chicken salad?

    I'm making a cranberry walnut or cranberry pecan chicken salad and am looking for creative way to plate/eat it. I've done sandwiches, lettuce wraps, and tortilla wraps. 

    Any other ideas? Don't care for pitas too much.

    The endive boats are great, I serve stuff in them all the time.

    You can also make parmesan bowls or puff pastry bowls by baking on the bottom side of a muffin pan.

    I like chicken salad on triangles or squares of spiced pumpkin bread as well as on mini pumpkin, zucchini, or orange cranberry muffins. Great in choux pastry puffs which you can make cream puff or cocktail sized. Lavash or warmed spiced naan is equally as good as are mini croissants. mini wonton cups work well too. I brush them with a five spice oil but there are as many infused oils as you can think up. I don't much care for the bitterness of endive but do like chicken salad in lettuce wraps layered with arugula, micro greens and radish sprouts. I second cheflayne's suggestion of cantalope halves especially if you add halved or champagne grapes to your chicken salad.

    I was thinking (sometimes a dangerous thing), and Bento Boxes popped into my head.

    Use the compartments for additional goodies like grapes, sliced apples, melon balls, pretzels, crackers, salad greens, baby carrots, chips, and maybe a brownie or small desert.

    Roll it up in cucumber, then bread with panko. Serve like sushi

    You can also place it inside halved bell peppers.  I would get all different colors, green, yellow, orange, red.  Cut them in half and roast them slightly and then fill with chicken salad.  Imagine how pretty they would look in a platter!
