2 Tablespoons of olive oil
½ cup of thinely sliced shallots
2 tablespoons of grated orange rind
2 teaspoons of minced fresh sage
½ cup of orange juice
¼ cup of maple syrup
Heat oil in a medium sauce pan , add shallots , rind and sage, cook for 5 minutes.
Then add orange juice , syrup and cranberries. Cook for another 5 minutes , cranberries will look like a compote once they have burst. If not cook a few minutes more. It should give you a cup.
(I like to put a touch of rum at the end of cooking)
If you feel this still to be too sweet, try adding a bit of lemon juice for more tart
