What can be created from puff pastry

Hi all,

Appreciate if you could share what can be done or created from leftovers Curry Puff(deep fry) dought?

Cheese straws or sugar straws are the classic use for puff pastry scrap.

Since you did curry puffs, I bet you could make a killer version of cong you bing using the puff pastry 'straw' method

Just out of curiosity, are you using French style or Chinese style puff? Been doing some reading, and it looks like Chinese style puff doesn't have any water in the fatty dough, so you're not going to get much puffyness. They have some really sexy looking rolling technique though for using chinese puff.

No puff pastry is puff pastry , Won ton skins are very different dough, as are egg roll and spring roll skins. You can use any leftover you have in puff pastry for cocktail parties etc the only limit is your imagination.

No.  Chinese "puff pastry" uses the short and quick method and substitutes shortening for the butter.  Basically cut in your shortening and flour like pie crust and then fold it like you do puff pastry.

Really? I've always known it as a laminate dough using ether a flour/lard paste or an oil roux. I would have never thought to have done it like blitz puff.

I thought one of the major points was to get a layer structure like this:

Cong you bing = Scallion pancakes.

Just sprinkle thin sliced scallions, toasted sesame seeds or sesame oil, and salt instead of cheese or sugar. Proceed as normal with the folding, cutting, and twisting.
