What alkali to use for noodles?

    I'm thinking of making a batch of noodles for use in stir frys and soups and was curious as to which alkali works best. I can't find lye water but, I do have lime paste on hand for making tortillas. I'm just wondering if lime water will give the right texture to the noodles as opposed to using either lye or soda.
