Welcome Fishbone - I have a couple of vintage Dexters that I have "made adjustments" to - love that old dirty carbon.

You know that Dexter still makes the High Carbon steel blades. What kind of adjustments did you make?

    Cook At Home
Welcome @Fishbone Knives  ! We're thrilled to have you as our newest sponsor and look forward to your participation in the site and the community.

I'm a home cook who's always keeping an eye out for good equipment. I've not had the pleasure of hefting a Dexter in my hand as yet, but will make a point of seeking one out to try it. There's an empty slot in my knife block, and you know how nature abhors a vacuum. /img/vbsmilies/smilies/rolleyes.gif

    Again, welcome to Chef Talk.

    Regards,

    Mezzaluna

    Welcome to Chef Talk!

My Grands were Christmas shopping and got stuck when my name came up.

The sheets are nice, but do not keep a decent edge  /img/vbsmilies/smilies/wink.gif.

Glad you are here to provide direction to the lost, lol.

I started doing conversions a couple of years ago and it's a lot of fun breathing new life into old iron.

Here's a Dexter slicer that was in sorry shape when I got it - who doesn't need a Pirate knife?

And a 12" Dexter chef - same condition - ODC then I converted it to Wa:

Here's a 10" Goodell made in New Hampshire - now one of my favorite knives:
