Wedding cake ideas

    Hello all,

    I have been unexpectedly surprised with the task of making a wedding cake for a friends upcoming nuptials. I have baked plenty of cakes in my time but admittedly this one has me nervous. The wedding will be very laid back in my backyard, nothing fancy at all. I would still like to do a nice cake though.

    Just wondering what some of the more popular and crowd pleasing cake combinations would be? I would definitely prefer to do a fondant icing. Some that I am considering:

    Golden cake with lemon curd buttercream

    Golden cake with raspberry

    Carrot cake with cream cheese (totally pedestrian and not sure if a good choice)

    As much as I love chocolate I think I want to stay away from it as a wedding cake. I would like to do 2 maybe 3 tier so I need a cake that is firm and will hold up well. ANY ideas, help, links would be so much appreciated. Thanks in advance.

    mabye do a plain maderia cake withfancy rose decorations and buttercream

    Thanks for the suggestion, I have never done roses before and they too are a little daunting. I checked out Wiltons how-to on roses and might give them a try. The madiera cake sounds good, never had one (knowingly).

    The wedding cakes I have made were made from Bizcocho...the cake is firm and "cuttable" without too much crumbling,  really tasty and moist. You can make it whatever flavor you desire.   I am not a certified anything, but have been making cakes for over 30 years for friends and relatives and the Bizcocho I found in Spain has been the best cake I have used for wedding and celebration cakes.    If you can, have a look at a few of my designs, i love making Roses, as you will see.     How about a pound cake?

    Golden and buttery and moist!

    Easy to stack and is safe for outside summer temps.

    My go to fondant... Fondarific (lots of colors, buttercream flavor).

    A bit pricey, but can be rolled so thin that I actually save money.

    Fondarific kinda absorbs the buttercream crumb coat layer and is so yummy tasting (I have had lots of fondant converts with this brand).

    For decos, Wilton has come out with a line of fondant molds, very inexpensive, Walmart even carries then for around 10 bucks.

    Ask the bride to provide you with some ribbon for the bottom edges .

    Only danger zone will be your fillings.

    Be sure they are shelf stable so no one gets sick.

    Just curious,

    When deciding on a cake, usually the bride and groom sit down with the one who will be making the cake and give their input into what flavors they would like , layers and so on....

    The other question : For how many people ?

    Thanks for all the input, keep it coming. Fondant selection here is limited, I plan on making my own. Buttercream roses look like the way to go. I have pretty much decided on butter cake.

    The B&G are giving me pretty much free reign on flavours and design. I am thinking a 14, 10, 6 round tiered cake, possibly torted with a lemon curd buttercream. The B&G may want the cake somewhat flavoured with rum/brandy etc? Still awaiting more input from them.
