Watching a Konosuke Sujihiki demo on youtube...

    I just watched a Konosuke Sujihiki White #2 demonstration in youtube

    Just out of curiosity , am I the only one that hurts seeing that knife banging like that on the board and then dragged to push aside the cut items? (or maybe it is the mic making it sound stronger)

    Do you use that style of cutting with your $250 knife and most importantly what is the effect of that on the edge?
    Or maybe I'm wrong and these are durable enough to be used like that.

    There's absolutely nothing wrong with using that knife in that way.  That's pretty much how I'd use any of my chef's knives (including both my Konosuke HD gyuto and HD suji) for those tasks. 

    To be very specific, Konos just aren't that delicate.  More generally, neither are any of the other knives you see recommended by most of us here.

    Kitchen knives are tools not fetishes, and meant to be used not revered.  Not to say there aren't some common sense limitations, but I wouldn't buy or recommend a knife someone couldn't use for most ordinary tasks with a modicum of knife skills.

    I find that post reassuring, because that video made me cringe a bit.

    I guess we noobies are a mite over sensitive.

    I thing I need to revise what I thought should or shouldn't be done with a knife.
    That is a very good point.

    My nephew needs a good throwing knife for camp, when they go bullfrogging at the pond around midnight. I was thinking of getting him one of these ...

    I'm trying to get to this point of understanding my knife needs, although I'm not quite there yet.  But I'm close mainly because I'm running out of room to store them /img/vbsmilies/smilies/licklips.gif

    Betowess, that's looks like a really good choice for him.  Looks well balanced for throwing, and sharp enough for whittling and cutting tent ropes.  He could probably disjoint the bullfrog faster than Martin Yan can do a chicken, then he could shave with it the next morning after he brenoised the carrots for lunch.
