vegetable sandwiches

    been eating a lot of bizarre veg combos....
    pumpernickle bread, sliced beets, red mustard or arugula, sunflower shoots, red onion, mayo.

    What veg sandwiches float your boat?

    Grilled zucchini, grilled onion, provolone cheese or maybe gouda or jarlsberg, vinegar and oil vinaigrette(or lemon balsamic) Sometimes with tomato, sometimes not.

    Breadwise, a rustic italian of some sort.

    Not truly a "vegetable" sandwich, but I enjoy fresh peach slices on whole wheat bread with just butter.

    Cucumber sandwiches - thin brown bread and butter, lightly salted cucumber... heaven!

    Similar to phatch, but no cheese, add red pepper.
    Grilled with balsamic vinaigrette, and the rustic Italian bread is a must.

    Also, I worked at a place where we had "the Veg Head".
    Grilled mushrooms and onions, sprouts, avocado, and grilled tofu slices that had been pressed and narinated in a light vinaigrette, all on grilled whole wheat bread.
    While I don't hate tofu, I never buy it for myself, but working there I learned a lot about it.
    So, while I would never buy it, whatever fell out of this sandwich when slicing it would always be gobbled up with enjoyment by me, it was so tasty.

    Avocado Dream

    Avocado, cream cheese, pepperoncini peppers, tomato slices, balsamic vinegar, sprouts, served either on sourdough or multigrain.....

    I eat this at Cafe Depot....prepared special, with a cafe latte...

    blanched cauliflower, blanched broccoli....coarsely chop both....
    saute big dice onions, summer squash
    add broccoli and cauliflower.....

    9 grain bread, swiss, mayo, "spike" found in healthfood stores....salty spice mix, hot veg mix....oh man....
    toast the bread and melt cheese.


    Then there's the ever popular: hummos, red onion, peeled charred red pepper, arugula, sunflower sprouts, tapenade, cuke slices.....pretty much any combo of the above.

    Had a great one the other day......pumpernickle bread slightly toasted, mayo, scrambled eggs, sliced beets, arugula....YUM!

    Just Jim, forgot about the avacado on the beet salad....man avacados make everything tasty.

    All time favourite... simple almost over-ripe tomato on REALLY fresh white bread with real butter.
    That's it.

    Eggplant, Spicy Red Pepper Walnut Paste, Mint Yogurt, Shredded Lettuce, and Mozzarella, on Sourdough Bread

    the corner bakery in denver makes the most delicious vegetable panini, it is called the California Grille on whole grain harvest with
    grilled zucchini, artichoke hearts, roasted tomatoes, pesto, with fresh spinach & provolone....mmm so good!

    Petals...Avocado Dream sounds incredibly tasty ;)

    I could live on a mozarella, tomato, basil, drizzle of balsamic panini on a good ciabatta.

    One I've mentioned before -Crunchy peanut butter and sweet pickled beetroot. ( Please try before you knock it)

    DC's riperipe tomato sandwich is an all time favourite

    Crusty white bread, buttered. Filling lettuce .Lots (any kind, mixed is fine) and salt.

    Layne, Turkish Eggplant is on my to try list....thanks for sharing.

    Seems like veg goo of some type or other, cycle through the fridges....artichoke/garlic/mayo/herbs, romesco...red peppers/tomato/garlic/almonds/orange/evo/spices, hummos, baba ganoush, tapenade, pestos, bean mash...whatever beans are around/garlic/evo/lemon juice/herbage......etc....

    Combined with fresh or cooked veg....

    tonight it's egg salad with arugula, not really a veg sandwich but darn close.

    PB & beet sandwich huh? that's a new one.

    That's one of my favorites also. Cream cheese, sprouts with either avocado or cucumber slices. I love grilled 'shrooms and onions with roasted red bell pepper, grilled cheese with canned anaheim chili slices.

    Nothing too strange, pretty common arrangements.
