So I love veal! I buy whole calves for an awesome and I mean awesome local farmer. I absolutely love all cuts(even ofals) of the animal but I am curious to hear what you other chefs favorite veal dishes are. My recent favorite is the loin chop or porter house cut seasoned with sea salt and pepper then brought up to room temp then grilled topped with my caramelized sweatbread butter, mushroom duxelles, and homemade veal demi served over foie gras risotto with applewood smoked bacon.
