I'm not sure I quite follow you. If you mean as a flavoring to get an evergreen type flavor, than you would use Rosemary.
there is an old southern recipe for potatoes cooked in a cast iron pot with boiling pine resin, but, it seems a little dangerous. I have tried the potatoes. You crack them open when the resin layer hardens and spoon out the inside. definite pine flavor, but, who knows if it is safe.
