Unpack the turkey to store it?

    Bought a 14lbs Turkey today. It's a nice free range natural turkey. It came in a sealed plastic packaging. Should I keep it in the packaging until the day after tomorrow when I'll cook it? Or should I remove it from the packaging, remove the inards, clean it and store it like that in the fridge?

    Unpack, removed innards, pack these in a plastic bag in fridge for making gravy. Wash and drain the bird, pat turkey dry with kitchen towel, cover loosely with plastic wrap on a plastic tray (helps dry the skin so makes its crisper) - can leave uncovered to make skin even drier.

    You could leave it packed, but to help get the good skin, better to air it a tad.
