I'm very interested in hearing people's opinions on these if anyone has tried their V1 gyutos. While not as popular as the sohontens, that seems to be more about the latter's availability in the west more than anything, because people in Tokyo seem .To love them as much. Like I mentioned in a previous thread, a friend of mine is staying in Tokyo this month and can get me one of these for a really good price. What do you guys think?
I've never used one myself, but I have been told (by a usually reliable source) that these knives are not up to their price. That said, I couldn't say with any confidence what exactly that means.
