troubleshooting with vegan donut recipe. plz help

Hi I have tried making vegan donuts using Marys test kitchen recipe (

For donuts
  1. 1/2 cup warm water (110°F)
  2. 1 teaspoon of yeast (half an envelope)
  3. 1 tablespoon golden flax meal
  4. 3 tablespoons coconut oil
  5. 2 tablespoons sugar
  6. 1 3/4 cups all-purpose flour
  7. 2 teaspoons vital wheat gluten (pure gluten flour)
  8. 1/8 teaspoon vanilla (optional)
My donuts came out fine but the main issue was that they didn't become fully round and swollen. the texture was light and airy. the dough didn't rise enough in the second proofing. I used generic all purpose flour and Flieshman brand active dry yeast. How can I get my donuts to become fuller and not so flat?
