    What is your idea on the perfect tropical dessert ?

    serunding kelapa ice cream with a passionfruit waffle and a Pusser's rum painkiller sauce

    A mango coconut tart with lime and a dash of rum - the flavors blend marvelously.  The recipe ingredients are below (for complete baking instructions see http://epicurean-bites.com/?p=53)

    For The Coconut Crust
    1. 1 cup sweetened, shredded coconut
    2. 1 1/2 cup all-purpose unbleached flour
    3. 1/4 teasp salt (omit if using salted butter)
    4. 1/2 cup powdered sugar
    5. 2 sticks salted butter, cold and cut in cubes
    6. 2 teasp freshly grated lime zest (optional)
    7. 1 tablesp water
    For The Filling #1
    1. 8 oz (1 package) cream cheese
    2. 1/2 cup granulated sugar
    3. 1/2 cup heavy whipping cream
    4. 1/2 cup coconut cream
    5. 3 tablesp lime juice

    For The Filling #2
    1. 1 can (398ml) unsweetened coconut milk
    2. 1/2 cup sugar
    3. 1 vanilla bean, split lengthwise and scraped
    4. 3 egg yolks
    5. 2 tablesp corn starch
    6. 2 tablesp dark spiced rum
    7. 1/2 cup heavy whipping cream
    8. 3 tablesp freshly squeezed lime juice (optional)

    For The Mango Topping
    1. 3-4 ripe mangoes (I used Kent mangoes)
    2. 1/4 to 1/3 cup sugar (according to taste)

    Thyme, a coconut crust is my favorite way to eat key lime pie. I know it's adulterated but tastes so dang good. I like to put a little tequila in it too sometimes for a margarita pie. Yours sounds divine!

    Forgot to add that I also really enjoy a simple sorbet like mango or strawberry swimming in champagne. As kids my mom used to give that to us so I guess there's some nostalgia associated
