Todays Chef Table

    Did a chefs table with one of my junior classes today.

    Today was French regional cooking Pays~Basque.

    Pays~Basque :lips: One of my favorite areas of France. That and aww.....who am I kidding I love all of it :lips:
    So what was on the table? I can see a salad, looks like corn and peppers, the guy in the front has a finger cot and you have a pack of playing cards or Pall Malls :eek: :D

    You are to funny. I really had a good laugh. You must of blown up the photo quite a bit to see the finger cot and the "Pall Malls" On the plates are scallops and chicken done in the classic Basque style, a frisse salad with home made duck bacon and a warm vinaigrette, ouef piperade and a Robuchon lamb tartlette. We also prepped Strasbourg and Toulouse sausages for Chourcroute and Cassulet, and broke down pekin ducks and started our cure for confit (for the cassulet)
