Tips on sauce for salmon/steak over mashed potatoes/white rice?

    any ideas for a good sauce that would work well with salmon over mashed potatoes or rice, or beef over the 2?

    im not a fan of red wine reduction. i made my own sauce for salmon over potatoes that i like and i used (light)soy sauce + sugar+red pepper flakes+corn starch+sesame seeds. i let it thicken just for a second then drizzle it over the salmon and some hits the potatoes.
     

    shit tastes great to me
     

    any other ideas on home made sauces for salmon/steak?

    Herbed butter sauces go well with the items mentioned, from a simple butter infused broth to the more complex bernaise and hollandaise types.  Buerre blanc goes well with salmon in my opinion, I've been meaning to try a buerre rouge on beef.

    I also like a creamy mustard sauce. I like to stir in some shallots and garlic into the pan drippings and let them soften. Add a dollop of Dijon and deglaze with vermouth. Stir in a little cream and butter and strain. Then sprinkle in herbs like dill or parsley.
