    Got me some half price pork rib loin chops! Would love to hear any marinade, rub, or seasoning suggestions...

    I see thick, bone-in chops stuffed with a mixture of fresh apples, dried cranberries a little bit of good quality bread and some fresh herbs of your choosing.  Baked to a nice blush.  I also see a side of wild rice and roasted brussel sprouts, MMM /img/vbsmilies/smilies/licklips.gif  When's dinner?

    Unmolested, or "deep marinated" with a salt solution? Bacon, sauerkraut and onions. Boiled new potatoes with butter. Or mashed potatoes with a ginger snap gravy.

    How about a creamy mushroom marsala sauce w green beans on the side, and mini cauliflower-boursin souffles. There are some good-looking recipes and pics on the noblepig site. The mushroom leek bread pudding sounds good too.

    Just salt and pepper for the chops. Served with roasted mushrooms and chesnuts, maybe a nice bright green rosemary oil as garnish?

    I sort of combined the suggestions with a bit of a twist on a longtime favorite: porkchop casserole.

    I sliced up purple potatoes skin on, and layered alternately with sweet taters and cauliflower in a baking dish. Topped with both porkchops and ham, and thawed some homemade cream soup I made a few weeks ago containing a mix of shiitake and cremini mushrooms. The soup also contained caramelized onions which I feel really added another level of flavor. I was going to try and be fancy by throwing in some wine, but I got thirsty. Dolloped some butter into the mix then baked.

    My side dish was roasted asparagus and Brussels sprouts. In the end I kind of mashed everything together as usual.
