... to me this is the best time. The beginning. The first few ingredients that are going to be the foundation of a dish. The very first smells that fill the house. The very first "hhhmmmm it smells good in here!" from your kids or your spouse. The first promise of a satisfying dinner. Full of hope.

I'm doing a pasta sauce, inspired by Amatriciana, so basically bacon and tomato sauce, with Pecorino Romano.... I added some garlic and sage...
