Tarte/Quiche pan recommendation

Alright, I like Apilco porcelaine but would settle for tin plated stuff like Norpro.  What do you recommend for tartes and quiches - one pan only?  Apilco, Fatdaddio, Norpro at 9-10 inch diameter????

Tin plated steel with a removable botom.  I can usually get these coated with baker's glaze at a local re-glazing plant.

An "insurance paper" is also a good thing, it's just a disc of parchment paper you put on the bottom, and lay your dough over it--always can get your quiche out if you have your insurance papers....
