Tandoori Sizzle on cast iron plate

    Hi

    I am doing a tandoori chicken dish years ago I went to a indian restaurant they served the tandoori chicken on a cast iron sizzle plate the effect was out standing I think they had raw onions on the sizzle plate with the cooked tandoori on the top. I'm looking at creating the same visual effect ( steam and noise a 2 foot high) any ideas what was on the hot plate?

    I've not seen this done with a tandoori dish, but I've seen it done in a Tex-Mex restaurant with fajitas. The sauteed veggies and meat were piled on a cast iron pan which was smoking hot, (and safely fit into a custom-made wood holder). This caused some noise and sizzle. As it left the kitchen the server took a large wedge of lime and squeezed the juice onto the edges of the iron pan, thus causing even more steam and sizzle....very theatrical, albeit messy.

    Ahhh Thanks for that, the lime is a great idea it would go not to bad with the tandoori too /img/vbsmilies/smilies/smile.gif
