What is best, thymus or pancreas, and how tell the difference? Which is easiest to remove the veins?
The pancreas is richer in flavor but more expensive.
The thymus is elongated and the pancreas is larger and rounder.
If yo blanch them in boiling water or stock, then chill them in ice water the veins appear darker and you have a better chance of removing them this way. After that portion them and continue on....
