Summer Grilling

What are you cooking outdoors this summer?  It's gonna be a hot one!

I can't BELIEVE I've never thought of doing this until now.  Grilled potatoes, oh boy were they good. 

I started by cutting thick slices of yukons and parboiling until almost cooked through.  While still hot I tossed them in a marinade of olive oil, balsamic vinegar, fresh rosemary, minced garlic, salt/pepper.  Once they cooled we put them on the grill with pecan chips smoke.



In the coals I had seasoned and wrapped corn, you can just see them behind the potatoes.  Then I unwrapped and charred a bit, along with grilling some eggplant slices.

@Koukouvagia  I grill sliced potatoes with nearly every BBQ I make, however I never parboil. IMO parboiling just gives them a "boiled" taste and texture, and then grilling them gives them the grilled taste on the outside. They still taste like boiled potatoes inside. And anyway, there's... just no need to parboil at all. Simplify. I use oilve oil, S & P, and sometimes I add very thinly chopped rosemary leaves, and on direct heat they go. Few minutes on each side to get the desired color, then I move them to the top rack while I continue grilling my meats. By the time the meats are done, the potatoes are cooked. 

Like you I'm a huge fan of potatoes in many ways, shape and forms. As you may have noticed, I generally don't like parboiling, and I certainly hate parboiling potatoes (see http://www.cheftalk.com/t/79605/par-boiling-potatoes-for-home-fries#post_465716). And I love boiled potatoes, don't get me wrong, but when I grill, sauté or fry, I don't want the boiled taste inside. I believe that when cooking at home, parboiling is overused, even when it's not necessary.

For me parboiling has its uses.  There are times I like to roast my potatoes hard and fast and other times I like to parboil first.  I like both results and the variety they provide.  There is no wrong way to do potatoes.  The only thing I cannot abide by is a dry potato - I want it soaking in olive oil or butter or both.  Parboiling in this case allowed for deep marination of these potatoes.  I could even say that the final result had an almost deep fried quality, flavorful and soft on the inside and crisp on the outside.  There's room for all kinds of potato cooking thankgoodness, can't go wrong!  But if Siduri were here she'd agree with you 100%

After making Kevin Dundon's crispy roast potatoes parboiling is necessary.  If I'm pan or grill finishing I'll nuke them part way in the micro skin on.

When smoking I often put the chamber temp probe through a small potato, so that the tip of the probe is not touching the grates.

Haha we really ought to figure out ALL our potato recipes and share them somehow. 
 
There is no wrong way to do potatoes. 
OH YES there is. For example, par-boiling potatoes before sauteeing them is WRONG. It's not a matter of opinion, there is such a thing as wrong and right. And in this particular case I happen to be right (as in most cases to be honest). Ok I'm joking. I had a couple of glasses of wine with my dinner. /img/vbsmilies/smilies/drinkbeer.gif

Aaaaaaahhhh I miss @siduri. She knew what's up (with the exception of zucchini). I still make her cauliflower pasta on a regular basis. I also miss @boar_d_laze, and I also miss @ChrisLehrer  . I learned so much from them!!!

Yes, I remember RPMurphy and your potato challenge, that was a great one. I just looked back at the first four pages... a lot of ideas there.

Not sure why BDL left, I seem to recall that there was an exodus here a few years ago when a certain predatory member caused a lot of strife among the boards.  She left and may have taken with her BDL and KYHeirloomer too whom I was always fond of.  RPM got married and ditched us.  It's weird to recall past members here, we don't really know each other but we form a camaraderie.

Koukou, there's a Persian restaurant in my neighborhood that does marinated potatoes grilled over coals and they are divine. Their marinade is just lemon juice, olive oil, garlic, salt & pepper. I think they parboil, too.
