I am trying to find a tried and proven hot sugar recipe. I need to know how to pour hot sugar with just one person in a way to keep from getting burned seriously. I have a vinyl tube I need to pour the hot sugar into. What can I use to plug the other end so I can use both hands to pour with.

I would use a vise as well and double check on the max temp that equipment can work under. however before I did any serious sugar work I would have insulated mid-arm to elbow length gloves and eye protection. Having been a baker and dealt with sticky bun shmear, sugar gets mindblowingly hot and can be disfiguring.

Now does anyone know how to suspend a hard rubber ball inside a poured sugar ball mold. I need it to be exactly in the center.

Thank you so much. The advise is great and the protection is greater. I am not scared of hot sugar but I do respect its properties. I really don't like the possibility of getting burned really bad. I have seen some really bad burns on Food Networks Challenge and it is scary. Also my husband is making me a cradle the size of the vinyl tubing so it sits down in it and I can use the cork on one end and a funnel to pour into without being scared the tubing is going to flex so much under the heat that it comes apart. In this way the cradle hopefully stops this from happening.
