making your own- should you add fresh strawberries? concern would be that is watery. Or add something like strawberry preserves to the cream cheese?

Yeah when you sugar sliced strawberries, a lot of juice comes out. I would either do that and then cook it down or use prepared preserves.  Either way it is going to be a lot softer than store bought strawberry flavored cream cheese. I really don't like that stuff and just use plain cream cheese with jam on top.

Make sure the cheese is softened and whipped before you add the fruit. I make a dessert with pie filling and cream cheese and if you don't do that it is hard to blend and looks curdled.

Chopping your fresh strawberries before mixing them with the cream cheese will give you what you are looking for.

I'd be careful with adding sugar right away. Taste the mixture first then add whatever sugar is needed to taste.
