Stop Pork from Becoming Soggy?

    I made Sweet and Sour Pork, and I deep fried it. But when I combined the pork with the sauce in the wok, the once crispy pieces of pork became a soggy mess. How can I keep the deep fried coating from becoming limp and soggy?

    Put the sauce on immediately before you serve the pork or serve the sauce on the side.

    Toss in sauce right before serving. Also add a bit of cornstarch to your  batter as this repels moisture. It wont stop it if you hold pork a long time, but it will help
