it says that Place the stollen on the baking tray and leave again, covered, in a warm place, to rise until doubled in size again. is that actually correct? just i have a 32cm-31cm flat tray and i don't want it going over the edges so if it doesn't rise to double the size what sort of size should i be making the stollen?

It looks like you have to shape 2 smaller stollen instead of just one to fit both on the same pan side by side.

If you feel that the 2 half smaller stollen are too crowded on your 31 by 32 pan,I want to let you know that you could also use a round 10 " cake pan to bake the second half of your stollen on. A stollen can also be shaped round .There is no such thing as a stollen police checking on you.
